멀티오믹스 기반 발효식품 평가 및 분석
본 연구실은 발효식품의 복합적인 미생물 생태계와 대사 과정을 다각적으로 분석하기 위해 멀티 오믹스(Multi-Omics) 접근법을 활용하고 있습니다. 이를 통해 발효 과정에서 미생물 군집의 변화와 주요 대사 경로를 규명하고, 생성되는 대사산물과 단백질을 분석하여 기능성 성분의 변화를 추적하며, 유해 미생물의 증식 여부 및 유전자 발현 패턴을 분석하여 안전성을 확보합니다. 또한, 전통 발효식품의 과학적 근거를 제공하고 현대적 식품 가공기술과 융합하여 새로운 기능성 발효식품을 개발하는 데 집중하고 있습니다. 이를 위해 차세대 염기서열 분석(NGS, Next-Generation Sequencing), 메타볼로믹스(Metabolomics), 단백질체학(Proteomics), 생물정보학 분석, 기능성 평가 등의 다양한 방법을 활용하며, 발효식품의 품질 개선과 기능성 증대를 위한 혁신적인 접근법을 모색하고 있습니다.

식품 부산물의 업사이클링을 통한 고부가가치화 연구
식품 산업에서 발생하는 다양한 부산물을 유산균 발효 기반 Bioconversion 기술을 활용하여 신규 기능성 식품 소재로 업사이클링하는 연구를 수행하고 있습니다. 이를 위해 부산물 발효의 최적 조건을 확립하고, 질량분석 기반 대사산물 분석을 통해 발효 전후의 성분 변화를 조사하며, 유용 물질을 탐색하고 있습니다. 또한, exopolysaccharide(EPS), 프리바이오틱스 등 고부가가치 소재를 추출하여 다양한 기능성을 평가하고, 발효 균주의 프로바이오틱스 특성을 검증하기 위해 in vitro 및 in silico 기반의 다양한 분석 방법을 활용하여 신규 프로바이오틱스를 개발하고 있습니다. 이를 통해 유산균의 역할과 기능성 향상의 기작을 규명하고, 신규 소재에 대한 이해를 확장하여 친환경적이며 지속 가능한 식품 개발을 위한 과학적 기반을 마련하고 있습니다.

식품 안전성 평가를 위한 검출법 개발 및 신규 소재 검증
식품 안전성 평가를 위한 정밀한 검출법을 개발하고, 신규 식품 소재의 안전성을 검증하는 연구를 수행하고 있습니다. 이를 위해 LAMP, real-time PCR, digital PCR과 같은 다양한 분자 생물학적 분석 기법을 활용하여 식품 원료의 유전체 정보를 정밀하게 분석하고, 특정 타겟에 대한 고유한 분자 마커를 발굴하는 연구를 진행하고 있으며, 신속 정확한 검출법 개발, 식품의 위해요소 확인, 식품의 위·변조 방지 및 소비자 안전 확보에 기여하고 있습니다. 또한, 식용 곤충, 열대 과일과 같은 신규 식품 소재의 안전성을 검증하기 위해, 식품 소재간의 알레르기 교차반응을 확인하고 신규 소재 검출법을 개발하는 연구를 진행하고 있습니다. 이를 통해 신규 식품 원료의 안전성 평가 기준을 마련하고, 식품 산업의 신뢰도를 높일 수 있는 객관적 평가 체계를 구축하고 있습니다.
